Francis Boulard

Francis Boulard and his daughter Delphine belong to a long-standing family of winemakers who have been cultivating their vines with love, passion and dedication for 6 generations. The town is Cormicy, a French municipality located north-west of Reims: here, since 2009, the "Raymond Boulard" maison has been renamed "Francis Boulard", and renewed not only in the name, but also in the methods, which currently embrace the canons of biodynamic agriculture, in order to obtain pure and expressive Champagne. In the vineyard, herbicides and synthetic chemicals are banned, and the rhythms are dictated by the lunar calendar, which indicates the best time for each intervention. This way, complex, rich, natural clusters are harvested from the 3 hectares of vines owned by the company. The same way, the work in the cellar enhances every single and peculiar facet of the terroir. Chardonnay, pinot noir and pinot meunier grapes are left to ferment spontaneously by indigenous yeasts alone, and undergo continuous batonnage, and then mature in large and old oak barrels. Finally, the duration of the refermentation and the choice of sugar dosage complete the work, so that all Champagnes labeled "Francis Boulard" come to give wonderful organoleptic sensations, composed of large taste-olfactory structures, which is certainly not easy to find in any Champagne.
