Chavost

With more than 70 years of history, the Chavost Champagne is now showing itself in a totally new form, with a range of products without added sulphites. Strongly distinctive, the new labels look towards the past, towards a more conscious winemaking tradition, and pay homage to the Anciens, those winemakers who began it all. It is no coincidence, in fact, that the label of the "Blanc de Chardonnay" Sans Sulfites Ajoutés is inspired on a photograph of the past: the harvest of 1948 in the Domaine. The new range comes from the 5 hectares of vineyards in the Domaine – located in the heart of the commune of Chavot-Courcourt and officially converted to organic farming – and certainly stands out due to its uniqueness. The design is clear: committing increasingly to preserving the terroir. The new products without added sulphites are the merit of Fabian, the current Chef de Caves, who, after having vinified for more than 10 years in every corner of the globe, decided to come back to his homeland with the precise intent of measuring himself with another winemaking genre, more atypical and non-interventional. The Cuvées Sans Sulfites Ajoutés are a total of five. The Il "Blanc de Chardonnay" Extra Brut is produced - like all the wines in the sans sulfites ajoutés range - with the exclusive use of indigenous yeasts and opens up to notes of toasted bread, hawthorn, and yellow fruit. Here, creaminess is everything: fluid and very fresh, it is a guaranteed delight. The "Blanc d'Assemblage" Brut Nature - 47% chardonnay, 47% meunier, and 6% pinot noir – expresses itself with milky and buttery notes; its structure does not hesitate to reveal itself, but the balance – trust us – is surprising! The "Blanc de Meunier" Brut Nature is particularly fine and delicately fruity; wide and very long towards the end, it lets the pear and apple prevail, followed immediately by the hawthorn. Also in this case, the alcohol fermentation is spontaneous and the intervention in the cellar minimal.
