We owe the first official Chianti recipe to Baron Ricasoli. It is from 1840 and includes a grape blend ranging from the Sangiovese to the Canaiolo, with a twist of Malvasia. Today, the area of the designation has expanded significantly and now includes 6 Tuscan provinces, but at the same time the grape blend has become more limited, often reduced only to the Sangiovese or to the assemblage with Merlot or Cabernet.
