Extra Dry sparkling wine represents a distinctive category in the world of sparkling wines, characterized by a sugar content of between 12 and 17 g/l, which gives it a pleasant sweetness without being cloying. Contrary to what the name might suggest, this type is not particularly dry, but offers a slightly sweet taste profile that has won over a wide range of consumers around the world. Extra Dry has become the emblematic style of Prosecco, embodying the sparkling wine tradition of northeastern Italy, while also finding excellent interpretations in other appellations and production methods.

 

 

Organoleptic characteristics and personality

Extra Dry sparkling wines are distinguished by an appealing and immediately pleasant sensory profile. In the glass, they generally show a lively and abundant perlage, with a color ranging from light straw with greenish reflections in the fresher versions to more intense shades for products with greater structure. The bouquet is dominated by evident fruity notes (white peach, golden apple, pear) and delicate floral scents (wisteria, white flowers), with an aromatic freshness that is the hallmark of this category. On the palate, the slight residual sweetness perfectly balances the acidity, creating a sensation of softness and roundness that makes these sparkling wines particularly accessible even to novices.

 

 

Production methods and main appellations

The Extra Dry category finds its maximum expression in the Martinotti (or Charmat) method, which is particularly suitable for preserving the aromatic freshness and fruity fragrance typical of these sparkling wines. Prosecco is undoubtedly the emblem of this type, with its various appellations (Prosecco DOC, Prosecco Conegliano Valdobbiadene DOCG, Asolo Prosecco DOCG) offering interpretations of increasing complexity and territoriality. Outside the world of Prosecco, interesting Extra Dry wines can be found among the sparkling wines of Oltrepò Pavese, in the sparkling whites of Emilia, and in the sparkling wines made from native grapes from various Italian regions. Even in the Metodo Classico, there are Extra Dry productions, although less widespread, which offer complexity and structure accompanied by a slight softness.

 

 

Pairings and occasions for consumption

Extra Dry sparkling wine is an ideal choice for aperitifs and convivial moments, thanks to its immediate pleasantness and ability to accompany appetizers, finger food, and light starters. The slight residual sweetness makes it particularly versatile with delicately flavored dishes and preparations that have a moderate sweet or spicy component. Excellent with fish appetizers, traditional Italian first courses, light fried foods, and even desserts that are not too sweet. It should be served at a temperature between 6-8°C in tulip glasses that are not too wide to preserve its aromatic freshness. Extra Dry is the perfect choice for informal celebrations, festive toasts, and for introducing those who prefer softer and more accessible flavor profiles to the world of sparkling wines.
