Tasting Notes

Paglierino con riflessi dorati alla vista, impreziosito da raffinate bollicine. Intrigante il profilo olfattivo, con note di mela cotogna e agrume candito, fiori di acacia e ginestra, crosta di pane e nocciola tostata. In bocca rivela un ottimo corpo ed è fresco, minerale e cremoso.

Pairings

Uno spumante da abbinare a primi e secondi della cucina di mare, come spaghetti al sugo di polpo e filetto di baccalà al forno.

La cantina 1701 è l’unica della Franciacorta a possedere una certificazione biodinamica. Il Franciacorta Satèn “1701 dell’annata 2015 nasce uve chardonnay in purezza e il vino base è ottenuto con l’impiego di acciaio. La seconda fermentazione in bottiglia, attivata con mosto d’uva, è seguita da una sosta sui lieviti di almeno 36 mesi prima della sboccatura. Complessità e piacevolezza si delineano nel calice.

Brand

The 1701 winery is a young and dynamic business located in Cazzago San Martino (BS).

It was founded in 2012 by siblings Silvia and Federico Stefini, who, with the valuable support of a group of friends, decided to restore one of the oldest estates in the area and the adjacent vineyard to start producing Franciacorta DOCG sparkling wines in accordance with local traditions and, above all, with respect for the environment.

In 2015, they obtained organic certification and the following year biodynamic certification, becoming the first winery in Franciacorta to boast this recognition. Today, they have 10 hectares of vineyards dedicated to Pinot Noir and Chardonnay. Only biodynamic preparations are used in the vineyard, with scrupulous attention to the phases of the moon. In the cellar, the base wines for sparkling wine fermentation are made from indigenous yeasts and the liqueur de tirage consists mainly of must. After refermentation in the bottle, the sparkling wines are aged on the lees for a minimum of 30 months before disgorging. 1701 produces a line of Franciacorta DOCG wines that includes different types, an ancestral method sparkling wine and a still white wine, the “Surnàt”.
