Trento DOC

Trento DOC is a designation that identifies sparkling wines produced in the province of Trento. Its history dates back to the early 20th century thanks to pioneer Giulio Ferrari, a young oenologist who created a tradition of high-quality sparkling wine in Trentino. Today, Trento DOC represents Italian excellence in the sparkling wine sector thanks to its history, its passionate winegrowers and its unique territory, which offers the best conditions for the production of high-quality wines.

What are the Trento DOC regulations?

The Trento DOC regulations establish the rules and requirements for a producer to label their sparkling wine with this designation. The regulations require the use of 100% grapes from permitted vines (Chardonnay, Pinot Noir, Pinot Blanc, Pinot Meunier and Riesling). The minimum percentage of grapes from the protected area used for the production of Trento DOC is 70%. The wine must then be aged in the bottle on its lees for a minimum of 15 months for basic wines and 24 months for reserve wines, with an additional 3 months post-dégorgement. On the nose, Trento DOC sparkling wines should express aromas of white fruit and citrus combined with toasted bread. On the palate, the balance between acidity, softness and a long finish complete the tasting experience. The price is determined by the quality of the vineyards and the production techniques used.

Who are the best Trento DOC producers?

The best Trento DOC producers include: Ferrari, Cantina Levii and Maso Martis. Among these, Ferrari is the very symbol of the Trento DOC Designation of Origin, thanks to its long experience in producing high-quality sparkling wines such as Ferrari Brut and Ferrari Maximum, characterised by great elegance, freshness and complexity.

What to pair with Trenco DOC?

In general, it is recommended to pair Trento DOC sparkling wines with fish, shellfish and mollusc dishes. For example, a Trento DOC Brut can be paired with a seafood salad, prawns in cocktail sauce, shellfish or fish-based first courses.
