How to navigate the different types of Champagne?

Choosing a Champagne can seem complex, but a few guidelines can help. Blanc de Blancs, made from white grapes (mainly Chardonnay), offers floral notes and minerality. Blanc de Noirs (from Pinot Noir and Meunier), made from black grapes, has a richer body with hints of red fruits.

Rosé Champagne, produced using specific techniques, has notes of red fruits and flowers. Millesimato is vintage Champagne, produced only in exceptional years. There are also prestigious Cuvée de Prestige and Non-vintage Champagne, which blend grapes from different vintages.

What to eat with Champagne? The best pairings

Champagne pairs well with light starters such as salmon crostini or oysters. For first courses, a Blanc de Blancs goes well with seafood risotto or salmon pasta.
