CLOS MONT-OLIVET

A notarial deed dated 1547 refers to the sale of a plot of vineyard called ‘montem oliveti’. It is therefore likely that the history of the Clos du Mont-Olivet winery dates back more than five hundred years, even though it was not until the early 1900s that the Sabon family established its link with the vineyards in this area. Séraphin Sabon, a citizen of the village of Serignan du Comtat, married Marie Jausset, the daughter of a landowner in Châteauneuf-du-Pape. In 1932, Séraphin and Marie founded the winery, and since then the property has passed from hand to hand, from generation to generation. Today, Celine, David and Thierry are at the helm of Clos du Mont-Olivet, overseeing daily operations in the winery. The vineyards cover 21 hectares in the Châteauneuf-du-Pape AOC, 14 hectares in the Lirac AOC, 10 hectares in the Côtes du Rhône AOC and another 3 hectares in the Vin de Pays du Gard AOC. The various plots are very fragmented, and the exposure, microclimates and terroirs are extremely diverse, allowing each varietal to adapt to the soil that suits it best. For red grape varieties, Grenache reigns supreme, followed by Syrah, Mourvèdre, Cinsault, Counoise, Vaccarèse, Muscardin, Picpoul Noir and Terret Noir. As for white grapes, there is no predominant variety, and we find Clairette Blanche, Bourboulenc, Roussanne, Grenache Blanc, Picpoul Blanc and Picardan.
